Grandmommy's Chocolate Chip Cookies

I never met Ben's Grandmommy, but everyone tells me that if she were still living, we would have liked each other a lot. I love to hear Ben describe her: wearing a skirt and blouse everyday, always in the kitchen preparing the next meal, making everyone else eat but eating like a bird herself. I inherited a few serving pieces from her through Ben, but my favorite Vera Robinson memento is a collection of her recipes.

Ben asked me to share the recipe of the cookies he gave away over at his blog. They're his favorite cookies in the world, and it's quite a treat for him whenever I bake them once or twice a month. Oh, and the trick to making them really good: don't let them brown hardly at all. And if you can stand it, they do get better with age. So eat a couple the night you bake them, and save the rest for the next day or two or three. Ben tells me that mine are not quite as good as Grandmommy's, but so close. I take that as a high compliment.

Grandmommy's Chocolate Chip Cookies

1/2 cup soft margarine (1 stick)
3/4 cup light brown sugar
3/4 cup white sugar
2 eggs
2 and 2/3 cups Bisquick mix
12 ounces semi-sweet chocolate chips

Heat oven to 375 degrees. Mix well margarine, brown sugar, white sugar, and eggs. Stir in Bisquick and chocolate chips. Drop with a spoon on greased baking sheet. Bake from 8-10 minutes until light brown (we like them golden). Let cool.

Tara, the cookies were very much enjoyed. Actually, and I probably shouldn't admit this, but, Scott and I finished them up last night. They were good! Any wife who bakes those kinds of cookies for her husband is a good wife. :)
